If you love citrus, you will love this orange poppy seeds olive oil cake. It's easy to make. It's soft and moist and has a beautiful texture. The balance of citrus flavor, the nuttiness from the poppy seeds, as well as the unique flavor of olive oil, makes this cake hard to resist.
250gramscaster sugar or granulated sugar, 1 1/4 cups
Zest from two large oranges
120gramsfull-fat yogurt, or sour cream, ½ cup
3eggs, 170 grams
1teaspoonvanilla extract
120mlorange juice, 1/2 cup, from 1 large orange
100mlolive oil, 1/2 cup
2tablespoonspoppy seeds, 20 grams
260gramsall-purpose flour, 2 cups
1/2teaspoonsalt
2teaspoonsbaking powder
1teaspoonbaking soda
Syrup (optional)
120mlorange juice, 1/2 cup, from 1 large orange
2tablespoonscaster sugar or granulated sugar
Instructions
Preheat the oven to 350F (180C).
In a bowl, combine sugar and orange zest. Rub the zest and sugar with your fingers to help the zest release its natural oils.

In the same bowl, whisk yogurt, eggs, vanilla, orange juice, olive oil, and poppy seeds. Let the mixture sit for 5-10 minutes, giving time for the poppy seeds to soak and soften.
120 grams full-fat yogurt, or sour cream, 3 eggs, 1 teaspoon vanilla extract, 120 ml orange juice, 100 ml olive oil, 2 tablespoons poppy seeds
Meanwhile, whisk the flour, salt, baking powder, and baking soda.
Using a balloon whisk or silicon spatula, whisk the dry ingredients into the wet until it is a smooth batter.
Line a 10x4.5-inch (or 9x5-inch) baking dish with parchment paper and pour the batter into the dish.
Bake on the middle rack for 40 minutes, or until a toothpick comes out clean.
Transfer the cake with the parchment paper to cool on a wire rack. Enjoy!
Orange syrup (optional)
To make the syrup, add the orange juice and sugar to a saucepan and cook on medium heat for 5 minutes, stirring occasionally. Set aside.
120 ml orange juice, 2 tablespoons caster sugar or granulated sugar
Poke the cake with a skewer or a toothpick all over the surface and brush with the syrup as soon as it comes out of the oven, if you’d like.
