Yogurt pancakes

Light, fluffy, super easy, and quick to make, this is the perfect breakfast for the whole family.

Servings9 small pancakes (3-4-inchs, 8-9 cm)

Ingredients
  

  • 200 grams yogurt, 3/4 cup
  • 50 ml milk or water, 1/4 cup
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon raw cane sugar, or white or brown sugar
  • 130 grams all-purpose flour, 1 cup

Optional

  • 2-3 tablespoons mini chocolate chips, optional, but highly recommended!

Instructions

  1. In a bowl, whisk yogurt, milk, egg, vanilla extract, baking soda, salt, and sugar.
    200 grams yogurt, 50 ml milk or water, 1 egg, 1 teaspoon vanilla extract, 1/2 teaspoon baking soda, 1/4 teaspoon salt, 1 tablespoon raw cane sugar
  2. Add the flour and whisk until a smooth batter forms. If using chocolate chips, mix them in too.
    130 grams all-purpose flour
  3. Preheat your pan on medium with a little bit of oil, butter, or ghee.
  4. Scoop out the desired amount of batter. Let it cook until little bubbles start forming on top of the pancakes. Flip the pancakes and cook on the other side for about 20-30 seconds.
  5. Keep the pancakes warm, covered with a lid or a clean kitchen towel.
  6. You can enjoy them topped with yogurt and berries, chocolate chip, or bananas. Anything that makes you happy!

Notes

  • If your pancakes are browning to fast, lower your heat to prevent them from burning.
